Apple Puff Pancake

Description

Apples are baked into a breakfast cake. This is so delicious that you don’t need to add any syrup. A great alternative to regular pancakes.

Ingredients

  • 6 eggs
  • 1 ½ cups milk
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 3 tablespoons sugar
  • ½ teaspoon salt
  • ¼ teaspoon ground cinnamon
  • 2 tablespoons butter
  • 2 apples – peeled, cored and sliced
  • 3 tablespoons brown sugar

Instructions

  1. Preheat the oven to 425 degrees F (220 degrees C).
  2. Blend eggs
  3. milk
  4. and vanilla with an electric mixer in a large bowl. Add flour
  5. sugar
  6. salt
  7. and cinnamon; mix just until blended. Set batter aside.
  8. Melt butter in a 9×9-inch square pan. Arrange apple slices in the bottom of the pan; pour batter over them. Sprinkle brown sugar on top.
  9. Bake in the preheated oven until puffed and lightly browned
  10. about 20 minutes.

Cook Time: 30 mins
