Apple Pancake

Description

This is as close as I have found to the apple pancake at the Original Pancake House. A fluffy, sweet pancake. Excellent with a scoop of vanilla ice cream

Ingredients

  • 3 tablespoons butter
  • 1 large apple, cored and sliced
  • ½ cup white sugar, divided
  • 2 teaspoons ground cinnamon
  • 4 eggs
  • ⅓ cup milk
  • ⅓ cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Melt butter in an oven-safe skillet over medium heat. Add apple slices
  3. 1/4 cup sugar
  4. and cinnamon; cook and stir until apples are tender
  5. about 5 minutes. Remove from the heat.
  6. Beat eggs
  7. milk
  8. flour
  9. remaining 1/4 cup sugar
  10. baking powder
  11. vanilla
  12. and salt in a large bowl until smooth. Pour batter evenly over apples.
  13. Bake in the preheated oven until pancake is golden brown
  14. about 10 minutes.
  15. Remove from the oven. Run a spatula around the edges to loosen. Invert carefully over a large plate to serve.
