Apple Cider-Cranberry Bread

Ingredients

  • ¾ cup white sugar
  • ¾ cup dried cranberries
  • ¾ cup chopped walnuts (Optional)
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup apple cider
  • 2 eggs
  • ⅛ cup vegetable oil

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Spray a 9×5-inch loaf pan with cooking spray.
  2. Combine flour

  6. baking powder
  7. baking soda
  8. and salt in a large bowl.
  9. Beat apple cider
  10. eggs
  11. and vegetable oil in a separate bowl until frothy. Mix apple cider mixture into flour mixture until moist; pour into the prepared loaf pan.
  12. Bake in the preheated oven until a toothpick inserted into the center comes out clean
  13. 40 to 45 minutes.
