Description

This kale salad recipe is very quick and simple. Pour remaining dressing into a container, cover, and refrigerate up to 2 weeks.

  • 2 anchovy fillets
  • 2 cloves garlic, peeled
  • ½ teaspoon Dijon mustard
  • ½ cup olive oil
  • ¼ teaspoon salt
  • ground black pepper to taste
  • 6 cups kale leaves
  • 1 cup croutons
  • ¼ cup grated Parmesan cheese
