Actually Healthy Morning Glory Muffins

Description

I love muffins but don’t love how unhealthy they are. I made up this recipe so I can still enjoy muffins without developing muffin tops.

Ingredients

  • 2 tablespoons coconut oil, melted
  • 1 ½ cups oat flour
  • ½ cup chickpea flour
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking soda
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 1 cup apple butter
  • ¾ cup honey
  • 2 eggs
  • 2 cups grated carrots
  • 2 small apples, chopped
  • ¾ cup shredded coconut
  • ½ cup raisins
  • ½ cup chopped walnuts

Prep Time: 30 mins

Cook Time: 25 mins

Total Time: 1 hr 15 mins

Servings: 12
