California Clam Chowder

Description

A delicious California take on the traditional New England clam chowder. We serve this every Christmas Eve.

Ingredients

  • 6 slices bacon, or more to taste
  • 2 cups diced red potatoes, or more to taste
  • 1 cup diced celery
  • 1 cup minced yellow onion
  • 1 teaspoon salt
  • ½ teaspoon seafood seasoning (such as Old Bay®)
  • ½ teaspoon garlic salt
  • ½ teaspoon onion powder
  • ½ teaspoon thyme
  • white pepper to taste
  • ½ cup butter
  • ½ cup cornstarch
  • 2 cups half-and-half
  • 2 cups 2% milk
  • 4 (6.5 ounce) cans minced clams, undrained, or more to taste
  • 1 ½ tablespoons red wine vinegar
