Glasser’s Greek Marlin

Description

Marlin steaks with a tomato and basil topping, cooked in a garlic butter sauce. This fish is terrific served with Greek olives and feta cheese.

Ingredients

  • ½ cup butter, divided
  • 2 teaspoons minced garlic, divided
  • 3 tomatoes, cubed
  • 4 ounces fresh basil, chopped
  • 2 tablespoons fresh lime juice
  • 2 (6 ounce) swordfish steaks

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Melt 1/4 cup butter with 1 teaspoon garlic in a medium pot over medium-low heat. Stir in tomatoes
  3. basil
  4. and lime juice. Just before mixture comes to a boil
  5. reduce heat to low.
  6. Melt remaining butter in a small pot; mix in remaining garlic.
  7. Arrange swordfish in a baking pan; drizzle with garlic butter.
  8. Bake fish in the preheated oven for 7 minutes. Flip fish; continue baking until fish easily flakes with a fork
  9. about 7 more minutes.
  10. Spoon tomato mixture over fish to serve. Top with pan juices.
