Ron’s Grilled Shrimp

Description

This grilled shrimp is marinated in a sensational medley of citrus juices, garlic, cilantro, parsley and basil. If you don’t have a grill basket, thread shrimp onto metal or soaked wooden skewers. When using skewers, make sure to turn them over once during cooking.

Ingredients

  • ¼ cup lime juice
  • ¼ cup lemon juice
  • ⅓ cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 tablespoons finely chopped fresh cilantro
  • 2 tablespoons finely chopped fresh parsley
  • 2 tablespoons finely chopped fresh basil
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 tablespoon minced garlic
  • ½ teaspoon crushed red pepper
  • 2 pounds jumbo shrimp, peeled and deveined

Instructions

  1. Whisk oil
  2. lime juice
  3. lemon juice
  4. and vinegar together in a large bowl. Add cilantro
  5. parsley
  6. basil
  7. garlic
  8. crushed red pepper
  9. salt
  10. and black pepper; mix thoroughly.
  11. Add shrimp and toss to coat. Cover and refrigerate for 1 to 2 hours
  12. tossing occasionally.
  13. Preheat an outdoor grill for medium-high heat. Remove shrimp from marinade and shake off excess. Discard remaining marinade.
  14. Place shrimp in a grill basket. Cook on the preheated grill
  15. shaking the basket regularly
  16. until shrimp are pink on the outside and opaque in the center
  17. 5 to 6 minutes.
