Royal Rhubarb Crisp

If you love rhubarb-strawberry mixtures, you’ll love this sweet rhubarb crisp.

Ingredients

  • 4 cups chopped rhubarb
  • ¾ cup white sugar
  • 2 tablespoons quick-cooking tapioca
  • ½ teaspoon salt
  • ½ (10 ounce) package frozen sliced strawberries
  • 1 cup rolled oats
  • ⅓ cup brown sugar
  • ¼ cup sifted all-purpose flour
  • ¼ cup butter, melted

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Mix rhubarb
  3. white sugar
  4. tapioca
  5. and salt in a large bowl and toss to coat; let rest
  6. stirring occasionally
  7. for 30 minutes.
  8. Stir strawberries into the rhubarb mixture; spread into a casserole dish.
  9. Stir oats
  10. brown sugar
  11. flour
  12. and butter together in a separate bowl until crumbly; sprinkle over the fruit mixture in the casserole dish.
  13. Bake in preheated oven until set
  14. about 45 minutes.
