Grandma’s Butterscotch Pie

Description

This is one of my favorite holiday pies. Serve with whipped cream. Yum!

Ingredients

  • 1 cup packed light brown sugar
  • 4 tablespoons cornstarch
  • ½ teaspoon salt
  • 2 cups milk
  • 2 egg yolks, beaten
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract
  • 1 (9 inch) pie crust, baked

Instructions

  1. In top of double boiler
  2. combine brown sugar
  3. cornstarch
  4. salt and milk. Cook
  5. stirring constantly
  6. until mixture starts to thicken
  7. about 20 minutes.
  8. Whisk in egg yolks; continue to cook and stir until filling is thickened.
  9. While pudding mixture is cooking
  10. preheat the oven to 400 degrees F (200 degrees C).
  11. Remove filling from heat
  12. and stir in butter and vanilla.
  13. Pour filling into prepared pie crust. Bake in preheated oven until top begins to brown
  14. about 5 minutes.

Cook Time: 35 mins

Total Time: 1 hr
