Boiled Potatoes with Chives

Description

Simple but very good. Substitute new potatoes for the red if you prefer.

Ingredients

  • 3 tablespoons unsalted butter, softened
  • 2 pounds very small red potatoes, scrubbed
  • salt and ground black pepper to taste
  • 3 tablespoons finely chopped fresh chives

Instructions

  1. Place butter in a serving bowl.
  2. Place potatoes into a large pot and cover with salted water by 1 inch; bring to a boil. Reduce heat to medium-low and simmer until tender
  3. 10 to 15 minutes. Drain and cool until potatoes can be handled; cut potatoes in half.
  4. Place potatoes into serving bowl with butter
  5. season with salt and black pepper
  6. and toss with chives until potatoes are coated.

Prep Time: 15 mins

Cook Time: 10 mins

Total Time: 25 mins
