Roasted Rosemary Onion Potatoes

Description

These are so good. You can make them with just about anything as a side dish. And even my 5-year-old likes the flavor…so that could say something.

Ingredients

  • 1 small onion, finely chopped
  • 2 tablespoons vegetable oil
  • 2 tablespoons chopped fresh rosemary
  • 1 teaspoon chopped fresh thyme
  • ΒΌ teaspoon salt
  • β…› teaspoon ground black pepper
  • 1 ⅓ pounds potatoes, cut into 1-inch chunks

Instructions

  1. Preheat oven to 450 degrees F (230 degrees C). Grease a large baking sheet with a rim.
  2. Mix onion
  3. vegetable oil
  4. rosemary
  5. thyme
  6. salt
  7. and pepper in a large bowl; add potato pieces and toss to coat. Spread potatoes into prepared pan in a single layer.
  8. Bake
  9. turning occasionally
  10. until potatoes are lightly browned and tender when pierced with a fork
  11. 20 to 25 minutes.
