Turnip Green Soup

Description

This recipe was given to me by my aunt. I’ve never heard of it before but it is really good. A mixture of turnip greens, northern beans, kielbasa sausage, and seasonings. Great served with cornbread.

Ingredients

  • 1 teaspoon vegetable oil
  • 1 pound kielbasa sausage, cut into 1 inch pieces
  • 1 onion, chopped
  • 5 cups chicken broth
  • 2 (20 ounce) cans turnip greens
  • 2 (14.5 ounce) cans great Northern beans, rinsed and drained
  • 1 package vegetable soup mix (such as Knorr’s®)
  • 1 teaspoon hot pepper sauce (such as Tabasco®)
  • 1 teaspoon garlic powder
  • 1 pinch Creole seasoning (such as Tony Chachere’s®), or to taste
  • salt and ground black pepper to taste

Instructions

  1. Heat oil in a skillet over medium heat. Cook and stir kielbasa and onion in the hot oil until the onion is tender
  2. 5 to 7 minutes; set aside.
  3. Stir chicken broth
  4. turnip greens
  5. great Northern beans
  6. vegetable soup mix
  7. hot pepper sauce
  8. garlic powder
  9. Creole seasoning
  10. salt
  11. and black pepper together in a large saucepan; bring to a boil. Stir kielbasa mixture into the boiling broth mixture
  12. reduce heat to medium-low
  13. and cook at a simmer for 2 hours.

Total Time: 2 hrs 15 mins
