Porcupines

Description

These are great to make ahead of time and then freeze. We freeze them with mashed potatoes and corn as part of a homemade TV dinner.

Ingredients

  • 1 pound lean ground beef
  • ½ cup uncooked white rice
  • ½ cup water
  • ½ cup chopped onion
  • 1 teaspoon salt
  • ½ teaspoon celery salt
  • ⅛ teaspoon garlic powder
  • ⅛ teaspoon ground black pepper
  • 1 (15 ounce) can tomato sauce
  • 1 cup water

Instructions

  1. In a large bowl
  2. combine the ground beef
  3. rice
  4. 1/2 cup of water and onion. Blend in salt
  5. celery salt
  6. garlic powder and pepper. Mix well. Shape into 1 1/2 inch balls.
  7. Preheat oven to 350 degrees F (175 degrees C). In a large skillet over medium heat
  8. brown the meatballs; drain fat.
  9. In an 11×7 inch baking dish
  10. combine the tomato sauce and 1 cup of water. Place the browned meatballs into the tomato sauce
  11. turning to coat well.
  12. Cover and bake in a preheated oven for 45 minutes. Uncover
  13. and cook for an additional 15 minutes.
