Thai Sweet Sticky Rice With Mango (Khao Neeo Mamuang)

Description

This wonderful and authentic-tasting Thai dessert is as good, if not better, than any sweet sticky rice with Mango available in Thai restaurants.

Ingredients

  • 1 ½ cups uncooked short-grain white rice
  • 2 cups water
  • 1 ½ cups coconut milk
  • 1 cup white sugar
  • ½ teaspoon salt
  • ½ cup coconut milk
  • 1 tablespoon white sugar
  • ¼ teaspoon salt
  • 1 tablespoon tapioca starch
  • 3 mangos, peeled and sliced
  • 1 tablespoon toasted sesame seeds

Instructions

  1. Combine water and rice in a saucepan. Bring to a boil
  2. cover
  3. and reduce heat to low. Simmer until water is absorbed
  4. 15 to 20 minutes.
  5. While the rice cooks
  6. combine 1 1/2 cups coconut milk
  7. 1 cup sugar
  8. and 1/2 teaspoon salt in another saucepan. Bring to a boil over medium heat; remove from the heat and set aside.
  9. Stir cooked rice into coconut milk mixture. Cover and allow to cool for 1 hour.
  10. Make a sauce by combining 1/2 cup coconut milk
  11. 1 tablespoon sugar
  12. 1/4 teaspoon salt
  13. and tapioca starch in another saucepan; bring to a boil.
  14. Place coconut rice on a serving dish and arrange mangos on top. Pour sauce over mangos and rice. Sprinkle with sesame seeds.
