Quick and Easy Home Fries

Description

A quick way to make crispy home fries. Great for breakfast or as a side dish. Potatoes may be shredded and cooked in the same manner for crispy hash browns.

Ingredients

  • 3 medium russet potatoes, cubed
  • 3 tablespoons butter or margarine
  • salt and pepper to taste

Instructions

  1. Rinse potato cubes with cold water and drain well.
  2. Melt butter in a large skillet over medium heat. Place potatoes in the skillet and season with salt and pepper; mix well. Cover and cook for 10 minutes.
  3. Remove the lid and cook
  4. turning frequently
  5. until brown and crisp on all sides
  6. about 10 more minutes.
