Perfect Lemon Curd

Description

Wonderfully tart, classic English lemon curd…perfect with scones and tea.

Ingredients

  • ¾ cup fresh lemon juice
  • 1 tablespoon grated lemon zest
  • ¾ cup sugar
  • 3 eggs
  • ½ cup unsalted butter, cubed

Instructions

  1. Combine lemon juice
  2. sugar
  3. butter
  4. eggs
  5. and lemon zest in a 2-quart saucepan.
  6. Cook over medium-low heat
  7. whisking constantly
  8. until mixture thickens and bubbles
  9. about 5 to 6 minutes.
