Banana Oat Muffins

Ingredients

  • 1 ½ cups unbleached all-purpose flour
  • 1 cup rolled oats
  • ½ cup white sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 egg
  • ¾ cup milk
  • ⅓ cup vegetable oil
  • ½ teaspoon vanilla extract
  • 1 cup mashed bananas

Instructions

  1. Preheat the oven to 400 degrees F (205 degrees C). Line a 12-cup muffin tin with paper liners.
  2. Combine flour
  3. oats
  4. sugar
  5. baking powder
  6. soda
  7. and salt in a medium bowl; set aside.
  8. Beat egg lightly in a large bowl. Whisk in milk
  9. oil
  10. and vanilla. Stir in mashed bananas. Add the flour mixture and stir until just combined. Spoon batter into the prepared muffin cups
  11. filling each 3/4 full.
  12. Bake in the preheated oven until tops spring back when lightly pressed
  13. 18 to 20 minutes.
