Chocolate Ganache

Description

This is a rich, dark chocolate topping or decoration that has lots of uses. It can be whipped as filling or icing, or just poured over whatever cake you like.

Ingredients

  • 9 ounces bittersweet chocolate, chopped
  • 1 cup heavy cream
  • 1 tablespoon dark rum (Optional)

Instructions

  1. Place chocolate in a medium mixing bowl.
  2. Heat cream in a small saucepan over medium heat. Bring just to a boil
  3. watching very carefully because if it boils for even a few seconds
  4. it will boil out of the pot.
  5. As soon as the cream comes to a boil
  6. pour it over the chocolate in the mixing bowl. Whisk until chocolate has melted and mixture is smooth
  7. then stir in rum.
  8. To use ganache as a cake glaze
  9. cool slightly
  10. 5 to 10 minutes. Start pouring glaze at the center of the cake and work outward.
  11. For a fluffy frosting or chocolate filling
  12. allow it to cool until thick (up to 1 hour in the refrigerator)
  13. and then whip until light and fluffy. Apply it with a spatula like a conventional frosting.
