Camarones al Ajillo (Garlic Shrimp)

Description

Quick, easy and delicious shrimp that can be served over white rice or mofongo.

Ingredients

  • 1 tablespoon olive oil
  • ¼ cup butter
  • ½ green bell pepper, sliced
  • 1 large onion, sliced
  • 10 cloves garlic, pressed
  • 1 pound fresh large shrimp, shelled and deveined
  • ½ cup tomato sauce
  • 1 tablespoon dried parsley
  • ¼ teaspoon crushed red pepper flakes (Optional)
  • salt and ground black pepper to taste

Instructions

  1. Heat the olive oil and butter in a skillet over medium heat. Stir in the bell pepper and onion; cook and stir until the onion has softened and turned translucent
  2. about 5 minutes. Stir in the garlic
  3. and cook until fragrant
  4. about 1 minute more. Add the shrimp and cook until opaque
  5. about 2 minutes on each side. Stir in the tomato sauce
  6. parsley
  7. and red pepper flakes
  8. and cook until tomato sauce is warmed through
  9. about 5 minutes. Season with salt and pepper.
