Spinach Cheddar Muffins

Ingredients

  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 6 tablespoons butter, melted
  • 1 egg
  • 1 cup whole milk
  • ½ cup frozen chopped spinach – thawed, drained and squeezed dry
  • 1 cup shredded Cheddar cheese

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease 12 cup muffin cups.
  2. Mix the flour
  3. baking powder
  4. baking soda
  5. and salt together in a mixing bowl.
  6. Stir the melted butter
  7. egg
  8. milk
  9. spinach
  10. and Cheddar cheese together in a large mixing bowl until evenly blended. Slowly stir in the flour mixture to form a batter. Spoon about 2 tablespoons into each muffin cup.
  11. Bake in preheated oven until a toothpick inserted into the center of a muffin comes out clean
  12. about 35 minutes.
