Dijon Roasted Potatoes

Description

The Dijon mustard provides a slight tang that really kicks these potatoes to the next level! These are a family favorite at our house.

Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • ¼ teaspoon thyme
  • ¼ teaspoon rosemary
  • salt and ground black pepper to taste
  • 5 red potatoes, cut into 1-inch pieces

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). Grease a roasting pan.
  2. Stir olive oil
  3. Dijon mustard
  4. garlic
  5. thyme
  6. rosemary
  7. salt
  8. and pepper together in a bowl; add potatoes and toss to coat. Transfer potatoes to prepared roasting pan.
  9. Roast in preheated oven
  10. turning occasionally
  11. until tender in the middle
  12. 40 to 45 minutes.

Cook Time: 40 mins

Total Time: 50 mins
