Black Beans and Rice

Ingredients

  • 1 teaspoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • ¾ cup uncooked white rice
  • 1 ½ cups low sodium, low fat vegetable broth
  • 1 teaspoon ground cumin
  • ¼ teaspoon cayenne pepper
  • 3 ½ cups canned black beans, drained

Instructions

  1. Heat oil in a saucepan over medium-high heat. Add onion and garlic; cook and stir until onion has softened
  2. about 4 minutes. Stir in rice to coat; cook and stir for 2 minutes.
  3. Add vegetable broth and bring to a boil. Cover
  4. reduce to a simmer
  5. and cook until liquid is absorbed
  6. about 20 minutes.
  7. Stir in beans
  8. cumin
  9. and cayenne; cook until beans are warmed through.

Prep Time: 5 mins

Cook Time: 25 mins

Total Time: 30 mins
