Yummy Honey Chicken Kabobs

Description

Honey chicken kabobs with veggies. You can marinate overnight and make these kabobs for an outdoor barbecue as a tasty alternative to the usual barbecue fare! Fresh mushrooms and cherry tomatoes can also be used. (This can also be done in the broiler.)

Ingredients

  • ¼ cup vegetable oil
  • ⅓ cup honey
  • ⅓ cup soy sauce
  • ¼ teaspoon ground black pepper
  • 8 skinless, boneless chicken breast halves – cut into 1 inch cubes
  • 2 cloves garlic
  • 5 small onions, cut into 2 inch pieces
  • 2 red bell peppers, cut into 2 inch pieces
  • skewers

Instructions

  1. Whisk together honey
  2. soy sauce
  3. oil
  4. and black pepper for marinade in a large glass bowl. Remove 1/4 cup of the marinade to a small jar; seal and set aside to use while cooking.
  5. Add chicken
  6. onions
  7. bell peppers
  8. and garlic to the marinade in the large bowl. Cover and marinate in the refrigerator for 2 hours or overnight.
  9. When ready to cook
  10. preheat an outdoor grill for high heat and lightly oil the grate.
  11. Drain marinade from the chicken and vegetables
  12. and discard marinade. Thread chicken and vegetables alternately onto skewers.
  13. Place kabobs on the preheated grill. Cook
  14. turning frequently and brushing with the reserved marinade
  15. until the chicken is no longer pink in the middle and the juices run clear
  16. 12 to 15 minutes total.
