Ten Minute Enchilada Sauce

A super speedy enchilada sauce with a truly authentic taste.

Ingredients

  • ¼ cup vegetable oil
  • 2 tablespoons self-rising flour
  • ¼ cup New Mexico or California chili powder
  • 1 (8 ounce) can tomato sauce
  • 1 ½ cups water
  • ¼ teaspoon ground cumin
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion salt
  • salt to taste

Instructions

  1. Heat oil in a skillet over medium-high heat. Stir in chili powder and flour
  2. reduce heat to medium
  3. and cook until fragrant and deepened in color
  4. stirring constantly to prevent the flour from burning
  5. about 1 minute.
  6. Gradually stir in water
  7. tomato sauce
  8. cumin
  9. garlic powder
  10. and onion salt until smooth. Continue cooking over medium heat until thickened slightly
  11. about 10 minutes. Season with salt.
