Peanut Butter Marshmallow Squares

Description

I have been making these for years, and they are always a hit!

Ingredients

  • ½ cup butter
  • 1 (11 ounce) package butterscotch chips
  • 1 cup peanut butter
  • 1 cup flaked coconut
  • 1 cup chopped walnuts
  • 3 ½ cups miniature marshmallows

Instructions

  1. Grease a 9×13-inch pan; set aside.
  2. Place butterscotch chips
  3. peanut butter
  4. and butter in the top of a double boiler over simmering water. Stir frequently
  5. scraping down the sides with a rubber spatula to avoid scorching
  6. until melted and combined
  7. about 5 minutes. Remove from heat.
  8. Stir marshmallows
  9. coconut
  10. and walnuts into butterscotch mixture until evenly combined.
  11. Pour mixture into prepared pan. Refrigerate until set
  12. about 1 hour. Cut into 18 squares and store in the refrigerator.
