Pan Seared Lemon Tilapia with Parmesan Pasta

Description

Citrusy tilapia, served with a cheesy but light pasta.

Ingredients

  • 4 ounces elbow macaroni
  • 2 tablespoons light olive oil
  • 2 tilapia fillets
  • 1 tablespoon lemon juice
  • ⅛ teaspoon dried oregano
  • 1 pinch dried basil
  • 1 pinch dried cilantro (Optional)
  • 1 pinch salt and ground black pepper
  • 1 tablespoon light olive oil
  • ¼ cup freshly grated Parmesan cheese
  • 1 teaspoon lemon juice
  • 1 pinch garlic powder
  • 1 pinch dried basil
  • 1 pinch dried oregano
  • 1 pinch dried cilantro (Optional)
  • 1 pinch salt and ground black pepper

Instructions

  1. Bring a saucepan of lightly salted water to a boil over medium heat
  2. stir in the macaroni
  3. and return to a boil. Cook the macaroni uncovered
  4. stirring occasionally
  5. until it is cooked through but still firm to the bite
  6. about 8 minutes. Drain well.
  7. Meanwhile
  8. heat 2 tablespoons of olive oil in a skillet over medium heat. Sprinkle both sides of the tilapia fillets with lemon juice
  9. oregano

  13. and pepper
  14. and lay the fillets in the heated skillet
  15. making sure they don’t touch. Sear the fillets for 2 to 4 minutes on each side
  16. until the fish is golden brown on the outside
  17. and opaque and flaky inside.
  18. Return the hot
  19. cooked macaroni to the saucepan
  20. and stir in 1 tablespoon of olive oil to coat the pasta. Sprinkle on the Parmesan cheese
  21. stir to mix
  22. and stir in 1 teaspoon of lemon juice
  23. the garlic powder
  24. basil
  25. oregano
  26. cilantro
  27. salt
  28. and pepper. Divide the pasta between two plates
  29. and top each with a tilapia fillet.
