Ground Beef Shepherd’s Pie

Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 1 pound lean ground beef
  • 1 teaspoon dried basil
  • 1 clove garlic, minced
  • 1 cup green beans
  • 1 cup tomatoes, diced
  • 2 potatoes, cooked and mashed
  • 1 egg, beaten
  • ½ cup water
  • ¼ cup shredded Cheddar cheese (Optional)

Instructions

  1. Preheat oven to 350 degree F (175 degree C). Coat a 2 quart casserole dish with cooking spray.
  2. Heat oil in a large skillet over medium heat. Cook onion in oil for 5 minutes
  3. stirring frequently. Stir in the ground beef and basil
  4. and cook and stir for 5 more minutes. Mix in the garlic
  5. green beans
  6. and tomatoes
  7. and simmer for 5 minutes. Transfer beef mixture to prepared dish.
  8. In a mixing bowl
  9. mix together the mashed potatoes
  10. egg
  11. and water. Spread evenly over meat mixture.
  12. Bake in a preheated oven for 15 to 20 minutes
  13. or until potatoes start to brown on top. Sprinkle with cheese
  14. and continue cooking for 5 minutes.
