Watermelon Jellies

Description

Watermelon rind candy tastes like gumdrops!

Ingredients

  • ¼ cup white sugar, or as needed
  • 1 cup diced watermelon rind, white parts only
  • 1 ½ teaspoons salt
  • ½ cup water
  • ½ cup white sugar
  • 1 ½ teaspoons lemon grass, chopped

Instructions

  1. Line a baking sheet with parchment paper and sprinkle 1/4 cup sugar all over the parchment.
  2. Place watermelon rind in a saucepan and cover with water; bring to a boil
  3. reduce heat to medium
  4. and simmer until slightly softened
  5. about 5 minutes. Drain
  6. rinse
  7. rinse saucepan
  8. and return watermelon to saucepan.
  9. Stir salt and enough water to cover into watermelon rind in the saucepan. Bring to a boil
  10. reduce heat to medium
  11. and simmer until softened
  12. about 10 minutes. Drain
  13. rinse
  14. rinse saucepan
  15. and transfer watermelon to a bowl.
  16. Combine 1/2 cup water
  17. 1/2 cup white sugar
  18. and lemongrass in the same saucepan; bring to a boil
  19. add watermelon rind
  20. and stir to coat. Reduce heat to medium-low and simmer
  21. stirring occasionally
  22. until most of the liquid evaporates
  23. about 30 minutes. Continue simmering
  24. stirring constantly
  25. until remaining liquid evaporates and watermelon rind has a gumdrop-like consistency
  26. about 30 minutes more.
  27. Transfer watermelon rind to prepared baking sheet and roll to coat with sugar. Store in an airtight container.
