Teriyaki Chicken and Peanut Lettuce Wraps

  • 1 cup roasted peanuts
  • 2 cups sugar snap peas
  • 1 large red bell pepper, julienned
  • 1 large carrot, julienned
  • 2 tablespoons vegetable oil, divided
  • ⅔ cup teriyaki sauce, or to taste
  • 1 head iceberg lettuce, leaves separated
