Vegan Baked Onion Rings

Description

These onion rings are vegan and baked, not deep-fried! Quick and delicious for a snack or side dish, these onion rings have great flavor with less fat and calories than a traditional recipe. Add spices as you desire.

Ingredients

  • extra-virgin olive oil cooking spray (such as Pam®)
  • 1 (14 ounce) can light coconut milk
  • 1 tablespoon apple cider vinegar
  • 2 sweet onions (such as Vidalia®), cut into 1/4-inch slices and separated into rings
  • 1 cup coarse cornmeal
  • ½ cup whole wheat flour
  • 1 tablespoon sesame seeds (Optional)
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ground black pepper to taste
