Spicy Corn Salsa

Description

This spicy corn salsa is easy to make. It almost tastes like Chipotle’s, just a little hotter.

Ingredients

  • 6 ears sweet corn
  • 2 each poblano peppers
  • 2 each jalapeno peppers, diced
  • ½ red onion, diced
  • ⅓ cup chopped fresh cilantro
  • 1 tablespoon lime juice
  • 1 pinch salt and ground black pepper to taste

Instructions

  1. Preheat an outdoor grill for medium heat and lightly oil the grate.
  2. Grill corn and poblano peppers on the preheated grill until corn has charred and peppers have softened
  3. 12 to 15 minutes. Remove from the grill and let cool enough to handle
  4. about 10 minutes.
  5. Cut corn off cobs and dice poblanos; place into a bowl. Add jalapenos
  6. onion
  7. cilantro
  8. lime juice
  9. salt
  10. and pepper and mix together.

Cook Time: 15 mins

Total Time: 40 mins
