Matzo Apple Kugel

Description

Delicious Passover specialty that’s easy and can be served with either meat or dairy dinners! Can also be made ahead and cooked later.

Ingredients

  • 4 matzo crackers, crushed
  • 3 eggs, beaten
  • ¼ cup white sugar
  • 1 teaspoon salt, divided
  • ½ teaspoon lemon juice
  • ⅓ cup applesauce
  • 3 Granny Smith apples – cored, peeled and chopped
  • ½ cup dried cranberries
  • ¼ cup white sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Place the crumbled matzos in a medium bowl
  2. and add enough water to cover. Let stand for 2 minutes
  3. then drain off excess water. Do not squeeze.
  4. To the bowl of matzo
  5. add eggs
  6. 1/4 cup sugar
  7. salt
  8. lemon juice and applesauce. Stir to combine. Mix in the apples and dried cranberries. Spread the mixture evenly into a 2 quart casserole dish. Mix together the remaining 1/4 cup of sugar
  9. and cinnamon; sprinkle over the top.
  10. Bake for 45 minutes in the preheated oven
  11. or until the top is golden
  12. and the apples are soft.
