Marinated Veggies

Description

A healthy way to grill veggies! Makes a great sandwich too!

Ingredients

  • ½ cup thickly sliced zucchini
  • ½ cup sliced red bell pepper
  • ½ cup sliced yellow bell pepper
  • ½ cup sliced yellow squash
  • ½ cup sliced red onion
  • 16 large fresh button mushrooms
  • 16 cherry tomatoes
  • ½ cup olive oil
  • ½ cup soy sauce
  • ½ cup lemon juice
  • ½ clove garlic, crushed

Instructions

  1. Place mushrooms
  2. tomatoes
  3. zucchini
  4. bell peppers
  5. squash
  6. and red onion into a large bowl.
  7. Mix together olive oil
  8. soy sauce
  9. lemon juice
  10. and garlic in a small bowl. Pour over vegetables; toss to coat. Cover the bowl and marinate in the refrigerator for 30 minutes.
  11. Preheat the grill for medium heat. Lightly oil the grates.
  12. Cook marinated vegetables on the preheated grill until tender
  13. 12 to 15 minutes.
