Instant Pot® Egg Roll in a Bowl

Description

All of the flavor of an egg roll in a bowl! Serve with or without rice. Garnish with Sriracha sauce, sesame seeds, and green onion.

Ingredients

  • 2 tablespoons olive oil
  • ½ cup diced sweet onion
  • ½ cup grated carrot
  • 1 teaspoon minced garlic
  • ½ pound ground chicken
  • ½ cup bulk pork sausage
  • 4 ½ cups sliced cabbage
  • ½ cup water
  • 2 tablespoons tamari
  • 1 tablespoon honey
  • ½ teaspoon ground ginger
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon salt
  • 1 teaspoon sesame oil (Optional)

Instructions

  1. Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add olive oil
  2. followed by onion
  3. carrot
  4. and garlic; cook until onion is translucent
  5. 5 to 7 minutes. Add ground chicken and ground sausage and cook until browned
  6. 5 to 10 minutes.
  7. Stir in cabbage
  8. water
  9. tamari
  10. honey
  11. ginger
  12. pepper
  13. and salt. Close and lock the lid. Select high pressure according to manufacturer’s instructions; set timer for 10 minutes. Allow 10 to 15 minutes for pressure to build.
  14. Release pressure using the natural-release method according to manufacturer’s instructions
  15. 10 to 15 minutes. Stir and add sesame oil.
