Greek Artichoke Appetizer

I got this recipe from my mother. This is one of the many great recipes my family and friends love.

Ingredients

  • 2 (6 ounce) jars marinated artichoke hearts, divided
  • 1 small onion, finely chopped
  • 1 ½ cloves garlic, minced
  • 4 large eggs, beaten
  • ¼ cup dry bread crumbs
  • ¼ teaspoon salt
  • ⅛ teaspoon ground black pepper
  • ¼ teaspoon dried oregano
  • ½ teaspoon hot pepper sauce (such as Tabasco®)
  • ¾ pound sharp Cheddar cheese, shredded
  • 2 tablespoons minced fresh parsley
  • 1 teaspoon grated Parmesan cheese
