Keto Coconut Bread

Description

This keto-friendly coconut bread is very light and fluffy.

Ingredients

  • 8 large eggs
  • ¾ cup coconut flour
  • 10 tablespoons butter, softened
  • 8 teaspoons refined coconut oil
  • 1 teaspoon xanthan gum
  • 1 teaspoon aluminum-free baking powder
  • ½ teaspoon salt
  • ½ teaspoon sugar substitute

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Line a 9×6-inch loaf pan with parchment paper.
  2. Beat eggs with an electric mixer in a bowl until thoroughly combined
  3. 2 to 3 minutes.
  4. Mix in coconut flour
  5. butter
  6. coconut oil
  7. xanthan gum
  8. baking powder
  9. salt
  10. and sugar substitute to the beaten eggs; beat until smooth and combined. Pour into the prepared loaf pan.
  11. Bake in the preheated oven until a toothpick inserted into the middle comes out clean
  12. about 45 minutes.
