Kris’ Lentil Sausage Soup

Description

Hearty lentil soup with polska kielbasa and veggies–so easy to prepare and oh, so good!

Ingredients

  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 stalks celery with leaves, chopped
  • 1 pound kielbasa sausage, sliced
  • 2 quarts chicken broth
  • 1 (15 ounce) can crushed tomatoes
  • 1 clove garlic, crushed
  • 1 pound dry lentils, rinsed
  • 2 bay leaves
  • salt and pepper to taste

Instructions

  1. Heat oil in a large stockpot over medium heat. Stir in the onion
  2. carrots
  3. and celery; cook and stir for 2 minutes. Add kielbasa
  4. chicken broth
  5. tomatoes
  6. garlic
  7. lentils
  8. and bay leaves and bring to a boil. Reduce heat and simmer for 2 hours. Season to taste with salt and pepper.
