Red Cabbage

Description

A sweet and sour side dish that’s really nice with pork, ham, or sausage. Tastes better on day two, and freezes well.

Ingredients

  • ¾ cup water
  • 1 small head red cabbage, finely shredded
  • 3 apples – peeled, cored and chopped
  • ¼ cup packed brown sugar
  • 1 cup distilled white vinegar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground allspice
  • ¼ teaspoon ground cloves
  • 2 tablespoons butter, divided

Instructions

  1. Place water in a large saucepan over high heat. Stir in cabbage
  2. apples
  3. vinegar
  4. brown sugar
  5. 1 tablespoon butter
  6. cinnamon
  7. allspice
  8. and cloves. Bring to a boil. Reduce heat
  9. cover
  10. and simmer
  11. stirring occasionally
  12. until cabbage is tender
  13. about 45 minutes.
  14. Stir in remaining 1 tablespoon butter before serving.
