Slow Cooker Lamb Chops

Description

Tender lamb chops slow cooked in a deep and rich red wine reduction gravy.

Ingredients

  • ½ cup red wine
  • ½ sweet onion, roughly chopped
  • 3 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 2 tablespoons lemon juice
  • 4 garlic cloves, minced
  • 1 tablespoon ground thyme
  • 1 tablespoon dried rosemary
  • 2 teaspoons ground basil
  • 1 teaspoon salt
  • 1 teaspoon coarse ground black pepper
  • ¼ cup tapioca starch
  • 1 ½ pounds sirloin lamb chops, room temperature

Instructions

  1. Combine onion and red wine in a slow cooker.
  2. Whisk honey
  3. mustard
  4. lemon juice
  5. garlic
  6. thyme
  7. rosemary
  8. basil
  9. salt
  10. and pepper together in a small bowl until well blended. Add tapioca starch and whisk until well combined. Let sit until mixture is thickened
  11. at least 5 minutes.
  12. Dip lamb chops in the honey-mustard mixture and massage until fully coated.
  13. Place chops in a single layer over the red wine and onion mixture in the slow cooker. Pour remaining honey-mustard mixture on top.
  14. Cover slow cooker and cook on Low for 4 1/2 hours.
