Description
Great side dish. French lentils (also called puy lentils) have a wonderful earthy flavor. You can’t substitute regular green/brown lentils. They are expensive but usually affordable at your local food co-op. Goat cheese has a creamier texture than feta. I like to add grape tomatoes.
Ingredients
- 3 tablespoons sherry vinegar
- 3 tablespoons olive oil
- ½ teaspoon minced garlic
- 1 tablespoon olive oil
- 1 cup French green lentils
- 1 (14.5 ounce) can chicken broth
- 1 cup water
- ⅓ cup chopped fresh chives
- ¼ cup chopped fresh cilantro
- ½ cup crumbled chevre (goat cheese)
- ½ cup quartered grape tomatoes (Optional)
