Jambalaya In a Jiffy

Description

You’ll appreciate this nicely spiced combination on days when you’re pressed for time.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 4 cloves garlic, minced
  • 1 pound fully cooked kielbasa, cubed
  • 1 (28 ounce) can diced tomatoes with juice
  • ½ cup water
  • 1 teaspoon paprika
  • ½ teaspoon dried oregano
  • ¼ teaspoon dried thyme
  • 3 dashes hot sauce
  • 1 ½ cups orzo pasta

Instructions

  1. Heat olive oil in a large
  2. deep skillet over medium heat; cook and stir onion and green bell pepper in the hot oil until tender
  3. 5 to 8 minutes. Stir garlic into vegetables and cook until fragrant and softened
  4. about 2 minutes.
  5. Stir kielbasa sausage
  6. tomatoes with juice
  7. water
  8. paprika
  9. oregano
  10. thyme
  11. and hot sauce into onion mixture
  12. bring to a boil
  13. and stir in orzo. Reduce heat to low
  14. cover
  15. and simmer until orzo are tender
  16. about 10 minutes.
