Easy Hoppin’ John

Description

An easy week night dinner that my kids love. Have it with a nice salad, and dinner is done. The red pepper should be adjusted to fit your family’s taste.

Ingredients

  • 1 pound smoked beef sausage, cut into bite-size pieces
  • 1 small onion, chopped
  • 3 (15 ounce) cans black-eyed peas, rinsed and drained
  • 2 (10.75 ounce) cans low sodium chicken stock
  • 1 cup water
  • ½ teaspoon cayenne pepper, or to taste
  • 2 cups uncooked instant rice

Instructions

  1. Place the sausage and onion into a large saucepan over medium heat
  2. and cook and stir until the sausage begins to brown
  3. about 10 minutes. Stir in the black-eyed peas
  4. chicken stock
  5. water
  6. and cayenne pepper
  7. and bring to a boil. Stir in the rice
  8. cover
  9. and cook
  10. stirring occasionally
  11. until the rice is tender
  12. 20 to 25 minutes.

Prep Time: 15 mins

Cook Time: 30 mins

Total Time: 45 mins
