Peanut Butter Noodles

Description

This is kid friendly with an Asian twist. Can also be made with spaghetti pasta.

Ingredients

  • ½ cup chicken broth
  • 1 ½ tablespoons minced fresh ginger root
  • 3 tablespoons soy sauce
  • 3 tablespoons peanut butter
  • 1 ½ tablespoons honey
  • 2 teaspoons hot chile paste (Optional)
  • 3 cloves garlic, minced
  • 8 ounces Udon noodles
  • ¼ cup chopped green onions
  • ¼ cup chopped peanuts

Instructions

  1. Bring a large pot of lightly salted water to a boil. Cook udon in boiling water
  2. stirring occasionally
  3. until noodles are tender yet firm to the bite
  4. 10 to 12 minutes. Drain.
  5. Meanwhile
  6. combine chicken broth
  7. soy sauce
  8. peanut butter
  9. ginger
  10. honey
  11. garlic
  12. and chili paste in a medium saucepan. Cook and stir over medium heat until peanut butter melts and sauce is heated through.
  13. Add drained noodles to peanut butter sauce; toss to coat. Garnish with green onions and peanuts.
