Chocolate-Stout Cupcakes with Maple-Bacon Frosting

Delicious cupcakes made with chocolate and beer, topped with a cream cheese frosting and, of course, bacon!

Ingredients

  • 1 cup stout beer (such as Frau Gruber® imperial)
  • 1 cup butter, at room temperature
  • ¾ cup unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 2 cups white sugar
  • 1 ½ teaspoons baking soda
  • ¾ teaspoon sea salt
  • 2 large eggs
  • ⅔ cup sour cream
  • 5 slices bacon
  • 3 tablespoons maple syrup, divided
  • ¾ cup butter, at room temperature
  • ¾ cup powdered sugar
  • 1 ½ cups cream cheese (such as Philadelphia®)
  • 1 tablespoon maple syrup

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Line 24 muffin cups with paper liners.
  2. Bring stout and butter to a boil in a saucepan over medium-high heat
  3. about 5 minutes. Set aside
  4. stirring occasionally
  5. until butter has melted. Mix in cocoa powder until smooth.
  6. Mix flour
  7. sugar
  8. baking soda
  9. and salt together in a bowl until thoroughly combined.
  10. Mix eggs with sour cream in a large bowl using an electric mixer on low until well combined. Add beer mixture slowly
  11. followed by flour mixture
  12. until batter is smooth.
  13. Divide batter between the prepared muffin cups
  14. filling each about 2/3 full.
  15. Bake in the preheated oven until a toothpick inserted into the center of a cupcake comes out clean
  16. 17 to 19 minutes.
  17. Remove from the oven and let cool completely
  18. about 30 minutes. Leave the oven on.
  19. Meanwhile
  20. lay bacon strips on an aluminum foil-lined baking sheet. Baste with 1 1/2 tablespoons maple syrup
  21. covering both sides.
  22. Bake in the preheated oven for 8 minutes. Turn bacon over
  23. baste with remaining syrup
  24. and bake until browned and crisp
  25. about 8 minutes more
  26. watching to make sure not to burn.
  27. Remove bacon and lay strips on parchment paper so they don’t stick to foil upon cooling. Let cool completely
  28. 10 to 15 minutes. Chop into pieces.
  29. Combine butter and powdered sugar in a bowl using an electric mixer until smooth. Beat in cream cheese until smooth. Beat in maple syrup. Frost cooled cupcakes and top with bacon bits.
