Chicken Hobo

Description

Outdoor cooking without the mess! Chicken breasts topped with peppered bacon are sealed together with potatoes, carrots, and onions in individual foil pouches. Perfect for the grill, or even right on the campfire coals.

Ingredients

  • 1 pound peppered bacon
  • 3 medium potatoes, chopped
  • 3 medium carrots, peeled and chopped
  • 1 medium onion, chopped
  • 4 skinless, boneless chicken breast halves
  • ½ cup butter
  • garlic salt to taste

Instructions

  1. In a skillet over medium-high heat
  2. cook the bacon until evenly brown. Drain
  3. chop coarsely
  4. and set aside.
  5. On 4 large squares of heavy duty aluminum foil
  6. evenly distribute the potatoes
  7. carrots
  8. and onion. Arrange the chicken breasts over the vegetables
  9. and sprinkle with the chopped bacon. Top each with 2 tablespoons butter
  10. and season with garlic salt. Fold the foil over the ingredients
  11. and tightly seal.
  12. Preheat an outdoor grill for medium-high heat.
  13. Place foil packets on the grill
  14. and cook for 20 minutes
  15. or until chicken is no longer pink and juices run clear.
