Description
This is another recipe that mom made for us frequently, especially in the summer, because they are a ‘no-bake’ cookie and freeze well. We’d eat them straight out of the freezer and, man, were they good!
Ingredients
- 1 cup chopped dates
- ¾ cup white sugar
- 1 tablespoon milk
- 1 stick butter
- 1 egg, well beaten
- 1 teaspoon vanilla extract
- ⅛ teaspoon salt
- 2 cups crispy rice cereal (such as Rice Krispies®)
- ½ cup chopped walnuts
- 1 (14 ounce) package sweetened flaked coconut (such as Bakers® Angel Flake®)
Instructions
- Combine dates
- sugar
- milk
- and butter in a saucepan and cook over medium-low heat until thick
- 5 to 10 minutes. Set aside to cool.
- Add egg
- vanilla extract
- and salt to the date mixture; stir to combine. Add crispy rice cereal and walnuts and mix very well.
- Pour coconut into a shallow bowl. Shape the date mixture into balls and roll in the coconut.
