Healthier Easy Meatloaf

Description

This no-fail recipe for meatloaf doesn’t take long to make and is healthier with lean ground beef, low-fat milk, whole wheat bread crumbs, some fresh parsley, and carrot.

Ingredients

  • 1 ½ pounds lean ground beef
  • 1 egg
  • 1 onion, chopped
  • 1 cup low-fat (1%) milk
  • 1 cup whole wheat bread crumbs
  • ½ cup chopped fresh parsley
  • 1 large carrot, grated
  • salt and ground black pepper to taste
  • 1 tablespoon brown sugar
  • 2 tablespoons prepared mustard
  • ⅓ cup ketchup

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9×5-inch loaf pan.
  2. Combine beef
  3. egg
  4. onion
  5. milk
  6. bread crumbs
  7. parsley
  8. and carrot in a large bowl. Season with salt and black pepper. Place beef mixture in the loaf pan.
  9. Stir together brown sugar
  10. mustard
  11. and ketchup in a small bowl. Pour over meatloaf.
  12. Bake in preheated oven until no longer pink in the center
  13. about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
