I used to buy egg salad at my company’s cafeteria. Learning this DIY recipe at home saved me a bunch of money! I hope you enjoy.
Ingredients
- 8 large hard-boiled eggs, peeled and cut into chunks
- 4 large hard-boiled egg whites, cut into chunks
- ¼ cup low-fat mayonnaise
- ¼ cup chopped fresh chives
- 1 teaspoon Dijon mustard
- ½ teaspoon celery salt
- ½ teaspoon paprika
- ½ teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
Instructions
- Peel 8 eggs. Chop eggs (both whites and yolks) and transfer to a medium bowl.
- Peel remaining 4 eggs; separate whites and yolks. Discard yolks
- or reserve for another use. Chop the whites and add to the bowl.
- Add mayonnaise
- chives
- Dijon
- celery salt
- paprika
- kosher salt
- and pepper. Mix until well combined.
