A Healthy Egg Salad

I used to buy egg salad at my company’s cafeteria. Learning this DIY recipe at home saved me a bunch of money! I hope you enjoy.

Ingredients

  • 8 large hard-boiled eggs, peeled and cut into chunks
  • 4 large hard-boiled egg whites, cut into chunks
  • ¼ cup low-fat mayonnaise
  • ¼ cup chopped fresh chives
  • 1 teaspoon Dijon mustard
  • ½ teaspoon celery salt
  • ½ teaspoon paprika
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper

Instructions

  1. Peel 8 eggs. Chop eggs (both whites and yolks) and transfer to a medium bowl.
  2. Peel remaining 4 eggs; separate whites and yolks. Discard yolks
  3. or reserve for another use. Chop the whites and add to the bowl.
  4. Add mayonnaise
  5. chives
  6. Dijon
  7. celery salt
  8. paprika
  9. kosher salt
  10. and pepper. Mix until well combined.
