Aunt Kathy’s Irish Soda Bread

My aunt’s Irish soda bread which we all loved. Family from the County Cork.

Ingredients

  • 4 cups all-purpose flour
  • 1 cup white sugar
  • 1 cup raisins
  • 2 tablespoons caraway seeds
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 eggs, beaten
  • 1 cup buttermilk
  • ¾ cup milk

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). Grease and flour a heavy pan.
  2. Mix flour
  3. sugar
  4. raisins
  5. caraway seeds
  6. baking powder
  7. baking soda
  8. and salt in a large bowl. Add eggs
  9. buttermilk
  10. and milk to the flour mixture; stir until evenly incorporated. Transfer dough to the prepared pan.
  11. Bake in preheated oven until when the bread is tapped on top it sounds hollow
  12. about 75 minutes.
